Cherry Pop Brownies.

Brownies are already a good idea. We made them a slightly worse one — in the best way. Half a Cherry Pop, chopped and folded through at the last second, so the sour cherries keep their bite and the chocolate goes molten. Plant-based. Nobody will ask. They’ll just have another.

You’ll need

  • Your go-to plant-based brownie batter (one batch — box mix is allowed)
  • Half a Cherry Pop bar, roughly chopped
  • A handful of fresh or frozen cherries, optional, for showing off
  • Flaky salt, to finish

Do this

  1. Make your usual vegan brownie batter. We’re not watching.

  2. Chop half a Cherry Pop into rough chunks — some big, some small, all welcome.

  3. Fold the chunks through at the very last second, off the heat, so they melt but don’t disappear.

  4. Into the tin, into the oven at 180°C for about 30–35 min. Fudgy middle, set edges.

  5. Cool a little (or don’t). Cut into nine, finish with flaky salt. Eat the spare half while you wait.

The cherries hold their shape. Your willpower won’t.
