Eton Mess.

The summer-fete classic, done the Dirty Cow way. Crushed strawberries, broken vegan meringue, and a pour of Silky Strawberry doing the job double cream used to. Messy on purpose — and nobody at the picnic needs to know it is vegan until you tell them.

You’ll need

  • 200g fresh strawberries, hulled and halved
  • 50ml Silky Strawberry Cre*m
  • 2 vegan meringue nests, broken (check the pack is vegan)
  • Whipped coconut cream, to fold through
  • Mint, to finish

Do this

  1. Crush half the strawberries roughly; keep the rest in pieces.

  2. Fold the strawberries through the whipped coconut cream.

  3. Break in the vegan meringue and pour over the Silky Strawberry.

  4. Fold once — barely — spoon into glasses, finish with mint. Mess is the point.
