Cookies No Cream Cheesecake.

A no-bake cheesecake is the great kitchen lie: looks like effort, takes none. Chop a whole Cookies No Cream bar through a vegan cream-cheese filling on a biscuit base, chill overnight, and accept the compliments you didn’t earn. No cream. No cow. We checked.

You’ll need

  • 250g vegan digestives, crushed
  • 90g vegan butter, melted
  • 400g vegan cream cheese
  • 100g icing sugar & 1 tsp vanilla
  • 1 whole Cookies No Cream bar, chopped

25 min + chill · serves 8 · uses one bar

Do this

  1. Blitz the biscuits, mix with the melted vegan butter, press firmly into a lined tin. Chill.

  2. Beat the vegan cream cheese, icing sugar and vanilla until smooth and thick.

  3. Fold most of a chopped Cookies No Cream through the filling. Save some for the top.

  4. Spread over the base, scatter the rest of the bar on top, level it off.

  5. Chill overnight (4 hrs minimum). Slice, serve, say nothing about how easy it was.
